This not a breakfast Champagne; this is for dinner. Actual dinner, not girl dinner. I know that Champagne get most often opened for NASCAR victories and fresh oysters, but there is a ton of diversity in the region!This wine come from a blend of 30+ premier cru plots scattered throughout Chamery, Vrigny and Coulommes la Montagne, with an average vine age of 35 years old.The base wine is fermented in a mixture of concrete and oak and is blended with 40% reserve wines. The wine rests in bottle for five years prior to disgorgement, and sees no dosage added. The resulting wine is rich and complex, but very focused and fresh. Pair with anything grilled, smoked or fried for an excellent experience.
